Traditional Meat Stew: Stufato
This is a traditional meat stew with beef. It is also good with pork, lamb, and wild meat. I suggest using a lean piece of meat and a fat one for the best result, but you can also opt for using only lean meat or only fat, it will be very tasty either ways!
Ingredients
- 200 grams of lean beef meat.
- 200 grams of fat beef meat.
- 2 large onions;
- 3 medium carrots;
- 500 grams potatoes;
- 2-3 glasses of wine;
- optinally bay leaf, rosemarin, garlic and juniper;
Perparation
Start by chopping the onions. Either large chunks or finely chopped will be good, it's up to preference, as anyways they will cook for long so the taste will spread and they will get soft no matter the size! Feel free to try both ways, maybe once try with finely chopped onions and another time with big chunks and see if you find the difference in taste, as for me it is not the case.
Peel the carrots and then proceed to cut them in big chunks as well, or, as for the onion, chop them into small pieces. In a pot, cook some oil at medium heat and por the onions and carrots; optionally you can also add some galic clove. Salt them a bit and let them cook for about 10 minutes until the onions get a golden color. Meanwhile take the meat and potatoes and cut them into chunks, and here as well the size is not really important because they will cook for long so the time will make them soft anyways.
Cooking
When the onions become golden pour also meat and potatoes into the pot, and cook for a while until the meat is brown. At this point fill the pot with wine to the same level of the meat and potatoes. Close the lid and let it cook on a low heat for at least three hours. Optionally you can add bay leaf, rosmarin and juniper, they go very well on this stew!
During the process, at some point if you want it thicker, you can take out the lid and let it cook without for one hour or longer, depending on how thick you'd like it. It will be good even as a soup honestly, so it is up to your preference. I strongly suggest dipping some bread on the sauce as it's probably even more delicious than the stew itself!
