Risotto with Meat and Wine Sauce

This dish is an explosion of tastes. It’s rich and creamy and the flavors combine making it a complete dish from the flavor profile yet easy to make! Butter and meat make its richness while wine adds sweetness and acidity that make one want another bite, and the aroma from the fire makes everything taste better.

Ingredients

  • Rice – rounded, not the long one;
  • minced pork and beef meat – should be a bit fatty, not too lean;
  • wine – dry red wine;
  • 2 onions;
  • 1 carrot;
  • 1/4 of a small cabbage;
  • a small piece of leek

Preparation

First of all let’s make the fire. Find some pieces of wood of different sizes and place the smaller ones below and the bigger on top; make sure there is some space between them for the air to go through: the fire has to breathe. Find some dry leaves and place them in the middle of the woods and light them up with a firelighter; keep adding leaves until the temperatures is high enough and the fire is holding itself.

All you need to do at this point is to cut one of the onions into small pieces, and then all is ready to get to the pots.

Cooking

Make a vegetable stock by placing the other onion, the carrot, cabbage and leek on a pot over the fire and cover them with water, then salt it.

In the meantime, cook the chopped onion on another pot in some fat until it softens; I used butter. Then add the meat and season it well with salt and pepper. Keep cooking it until it’s brown, then add the rice and toast it on the fat for a minute or two. Add the wine to deglaze and add flavor.
Keep adding vegetable stock a bit at a time to control the thickness and stir smoothly to extract the starch while cooking it for about 15 – 18 minutes. Taste it few times to check if salt quantity is good and eventually adjust.

Cooking outdoor is my favorite form of cooking. I like the whole process of making fire and cooking on it, and I think the fire really makes everything tastier.
